We have a serious question for all you readers out there that, to be honest, only recently came to our attention. We’re not sure if you knew this, but there is NO Breakfast in Bed day. I mean, there’s a day dedicated to tin cans (January 19) and lost socks (May 9). And sure, there are delicious days dedicated to foods like cheese pizza (September 5) and gummi worms (July 15). But how is there NO day dedicated to somebody bringing you a crazy delicious breakfast in bed that you didn’t have to cook OR even use your legs for?
I mean, we ALL need an excuse to not only stay in the world’s most comfortable bed longer, but to actually have a reason to eat in it when we’re not sniffling and sneezing and asking our husband to bring us a thousand tissues? We demand change!! And for when that day comes, we are going to mandate that these delicious food items, below, are made to celebrate. Just don’t forget to wipe up the crumbs!
1. Cornbread Waffles
There’s little I love more than cornbread, corn muffins, and waffles. And this recipe is the marriage of two of my very favorite things: Cornbread waffles! And, bonus, the recipe is super easy, which means you can sleep an extra hour before you make it.
2. Homemade Pop Tarts
If you’re like me and walk down the snack aisle just so you can say “Hi!” to the box of Pop Tarts you never buy, then this recipe is most definitely for you. While I’m a fan of strawberry and brown sugar, you can craft these with any fillings you like. Be sure to follow the recipe as-is so yours actually come out like the picture. I made these for a Super Bowl party as dessert, and while they tasted awesome, they looked a bit like a kindergartner made them.
3. Blueberry Muffins
What’s brunch without the most perfect blueberry muffin? Yeah, it’s called lunch. Which is why you need this ultimate blueberry muffin recipe in your cooking arsenal. This recipe calls for fresh blueberries, but if they’re not in season you can totally cheat and use frozen as well! Serve warm.
4. Cream Cheese Cinnamon Rolls
The smell of cinnamon in the morning is like a total gift in and of itself. But when the smell is because cinnamon rolls are baking in the oven? Don’t wake us, we’re dreaming. The cinnamon rolls aren’t dry like so many other recipes we’ve tried, AND they taste ridiculously awesome.
5. Mini Chocolate Chip Cookie Baked Donuts
Another mash up we love? Chocolate chip cookies and donuts! While this recipe is more complicated than some of the others, ask yourself this one question first: Who doesn’t love donuts? If you answered “me” just walk away now. We can’t even look at you.
6. Chocolate Chip Banana Bread
We love baking banana bread in our home, not only because it smells off-the-charts amazing, but because it tastes just as awesome as well. And, the best part is, it’s super easy. Tip: Instead of using flour, baking soda, baking powder and salt, we actually substitute good ‘ole Aunt Jemima pancake mix which already has all of this included. Pancake mix, bananas, milk and chocolate chips? Easy!
7. Challah French Toast
Bread. All the bread. That’s what we think about French toast. We just want it all! Seriously though, there’s nothing better than a great piece of French toast with syrup, honey, or fruit. Our favorite recipes use Challah, which is fluffy and soaks up the French toast mixture perfectly. And it’s great to snack on with butter or cream cheese, too, if you have leftovers. (Or so people have told us.)
8. Cornbread Ebelskivers
For a holiday brunch a few years ago my mom bought this thing called an Ebelskiver. I guess I would describe it as a pancake meets a donut. They’re round like munchkins, and you can fill them with chocolate, jam and more. This cornbread recipe is more savory than sweet, but you can use a regular dough recipe if you’re looking for something sweeter. They’re super fun to make, and taste great as well. This electric version is super easy to use.
9. Ricotta Lemon Pancakes
I’m a fan of anything lemony, so these ricotta lemon pancakes are basically my spirit animal. I get so excited when they are on the menu when we go out to brunch that any opportunity to replicate them at home is awesome. They are fluffy, moist and so ridiculously tasty.
10. The Bacon, Egg & Cheese Sandwich
Living in New York we order bagel sandwiches for breakfast, lunch and dinner. Sometimes I have them for dessert. JK (but not really). The secret to a great bagel sandwich, besides a great bagel, is fluffy eggs, crispy bacon and perfectly melted cheese to go with it. Plus you can eat this breakfast with your hands which makes it perfect for bed.
