Engagement Chicken. Seriously?

 

The Today Show just had a segment about Glamour magazine’s apparently infamous Engagement Chicken. Rumor has it then when you make this for your unsuspecting boyfriend, he will suddenly see that you are ring-worthy and start planning when he is going to propose to you. That must be some good chicken!

Beth Ostrosky, Howard Stern’s now-wife, said she made the chicken for Stern one night, and TWO YEARS LATER he proposed. Um, seriously? Is this a SLOW-ROASTING chicken?

Recipes for Two: Easy Chicken Breasts and Broccoli

 

When I was single, I rarely cooked. As soon as FH and I moved in together, I had this urge to become Suzy Homemaker and start buying a bunch of recipe books. The problem is, 90% of the time the recipes I “follow” from a book turn out crappy. So, I usually just call my mom  (who’s a great cook when she does) and ask her how she prepares something, and follow that. I hate measurements, so most of the time the “recipes” I use involve directions like “a little bit of this” and “a little bit of that.” Hence, this will be the start of a new “un-recipe” section where I post about things I made  for FH and I that actually turned out GOOD. And trust me, it’s not that common…but when they do work, they’re pretty darn tasty.

Easy Chicken Breasts:

-Two boneless, skinless, chicken breasts

-Plain breadcrumbs

-Grated parmesan cheese (from the container is fine)

-Olive oil

-Sea salt/pepper

Pre-heat the oven to 425 degrees. Coat the chicken breasts in olive oil, and salt and pepper each side. Then, coat each side with a light dusting of breadcrubs, followed by parmesan cheese. If you’re going to make the broccoli, read on. If not, simply place the chicken breasts on a non-stick baking sheet, and bake at 425 degrees for 20-25 minutes. 

Simple, Tasty Broccoli :

-Broccoli florets (however many you two want to eat)

-Raw, slivered almonds

-Olive oil

-Salt/pepper

If you’re making this along with the chicken breasts, put the broccoli on the same baking sheet as the chicken, but not touching on another. Drizzle the broccoli with olive oil, salt (I like to use several grinds of sea salt), pepper, and a handful of almonds. Lightly toss with tongs. Drizzle with a little more olive oil. Bake at 425 degrees for 20-25 minutes alone or with the chicken.
